A lump of [lentil apple walnut] loaf

by Teri on February 23, 2010

Happy Tuesday. LOST night. Love it.

Last night I made the Lentil Apple Walnut Loaf out of Clean Food. Doesn’t look very appealing, right? [I’m referring to the loaf, not my ancient pan.] It was tasty though. :) I left out the raisins, because I thought that sounded nasty, but would probably put them in next time [golden raisins, perhaps?]. I also left out the ume plum vinegar because I couldn’t find whatever the heck that is. And I left out celery because I don’t really like celery in things…and I thought the walnuts added sufficient crunch. Has anyone else made this? Did I totally botch it up by leaving out the raisins, ume plum vinegar, and celery?

This is the second recipe I’ve made out of Clean Food, and while both have been tasty, I have been a little underwhelmed by both. The flavors just don’t pop for me. Although, I suppose I can’t give a fair judgment when I don’t follow the recipes exactly. :) What do you fellow Clean Food owners think of this cookbook?

So for lunch today, I stuffed a slice between two toasted pieces of Whole Wheat Flax Bread and threw some tomatoes on the side. Voila! Quick lunch and it hides the lump of loaf [I hate that word].

After lunch, I wanted something sweet. Enter Stash decaf vanilla chai tea. This is a new acquisition for me and I quite like it. Especially with a little coconut milk.

Alright, back to work for me! I’m teaching PowerSculpt tonight and I’ve got some wicked new moves for the ladies from the Pump class I attended on Saturday. Muaahahahahah!

What’s your favorite kind of tea?

oh, that’s easy…Blueberry Slim Life from Yogi tea…the blueberry flavor is not overwhelming and it’s just a really fresh flavor!

I have a blueberry tea that I love too, but have never heard of/tried that brand. I’ll look for it!

I don’t own the cookbook but I think leaving out the raisins and vinegar in particular would make a big difference. Maybe another, easier-to-find vinegar could be a good substitute and give it that pop you’re looking for. Love your idea of using golden raisins.

The recipe only called for 5-6 drops of vinegar, so it must be strong stuff! :)

Oh my gosh, I have been wanting to try this recipe! I have got to now, looks good and perfect for a cold evening! I have found the vinegar in the Asian section at Whole Foods and yes, it’s strong but tasty. You could use red wine vinegar, probably?
My fave tea (right now) is Dandelion Tea by Traditional Medicines…yum!

I looked in the Asian section at WF and found other ume plum stuff, but not the vinegar. Weird.

Dandelion Tea? I’ve heard of it but never tried it. I’m a little scared. :)

YOu know I’ve made this one and I loooooved it hehehe. Chris and I SCARFED it. I left out the raisins b/c hot squishy raisins freak me out but I think I kept everything else the same and I included the ume plum vinegar. Even though you thought it was just “fair” how did you feel after eating it? Maybe I enjoying the recipes even more because I don’t feel weighed down afterwards. I find that I have been eating controlled portions and they don’t sit heavy in my stomach. And now I will read the rest of your post, LOL…on one of my posts, I renamed it lentil apple walnut pie, because I [obviously] also hate the word “loaf” in reference to FOOD. Yumm coconut milk in tea! Oh and…you are pretty wicked!

excellent idea to rename it. I think I’ll have to cross out the word loaf and write in pie in my book.

And you know…you’re right [of course]. I feel great after the meals I’ve made from that cookbook. I should focus on that more.

And I totally blew my dairy experiment on accident tonight. I’m an idiot. Details to come.

We seriously need to get together and exchange particularly groan worthy strength moves for our classes. Have you ever taken a band….threaded it through the step feet (in the little groove)….secured your feet in the straps, laid down, stick your legs up, and then have the class do splits?!?! The hip ab/adductors will SCREAM for days. It is AWESOME for inner/outer thigh.

What the?? NO! But that sounds incredible. I’ll have to try it out on my own before I try to teach it. :) I’m always looking for things to target inner/outer thighs – thanks!!

I would love a get together to exchange moves. We’ll add that to the agenda for the blogger meet-up, k?

you know I love you, right Teri? So I can say this: That looks disgusting. And, it looks even worse between bread! If you want something ‘loaf’ then you should have been around last week when I made banana bread complete with oil and buttermilk. I just won’t tell you how much oil…..

ps – - your tomatoes looked good!

I think the loaf looks fab. I would absolutely go for it, the raisins would be a nice addition. The walnuts for sure!

I was surprised at how much the walnuts added to the dish. Fab!

I love chamomile tea and basically any of the teas from Republic of Tea. Loaf, ha ha! I don’t have the Clean Food book, but it looks pretty tasty. I just bought the Eat Clean Diet Recharged Cookbook and need to start trying out some of those recipes.
