Speaking of things that have been missing too long from my life, it was definitely time to bring back breakfast groats. I discovered oat groats for the first time in college as a teacher’s assistant at an elementary school; the teacher I worked with was very healthy and gave me lots of ideas to help deal with my IBS, including eating a healthier, unprocessed breakfast. This was the first way I tried oat groats and it’s still my favorite.
Wondering what groats are? They are the pure form (think Heidi Montag pre-717 surgeries) of oatmeal. Oat groats are streamed and then rolled to make oatmeal. Now you know. Don’t you feel smarter?
To make oat groats, I advise the following:
- Buy oat groats. (Either in bulk or from Mr. Bob.)
- Lather. Rinse. Repeat.
- Measure 1/2 c. oat groats (2 servings) into a pot and cover with 1.5 – 2 c. water.
- Bring to a boil, then reduce to low and simmer for 15 minutes. Drain any excess water.
- Top with things that will elicit odd looks from any witnesses of your breakfast.
This method will give you slightly chewy oat groats. My favorite toppings are avocado, tomato, sprouts (which I currently don’t have), cheddar or monterey jack cheese, and Bragg’s Liquid Aminos (which I also currently don’t have). Mmm…the way the cheese melts on the oat groats….it’s a perfect combo.
A breakfast with protein, good fats, and veggies? Yes, please. (FYI, 1/4 c. dry oat groats has 7 grams of protein and 4 grams of fiber.) I suppose you could eat this for meals other than breakfast…but it probably wouldn’t feel right.
After breakfast, Maizey and I took a picture to try to convince Rob to come home early; he has been in New Orleans this week for a moot court competition for law school and as you can see, Maizey is very depressed about it. Come on, puppa – cheer up! You’ve got me! (She doesn’t care.)
Our picture worked and he is coming home a day early. (Actually, he hasn’t even seen this picture, but we’ll pretend.) I’m excited to see him tonight, but I guess that means I’ll have to rearrange the Netflix queue.
As I got dressed this morning, I pulled out this sweater that I haven’t worn in a while. (Don’t mind the pile of clothes in the bedroom…I have a problem putting things away. And there have been no witnesses this week.) And do I look like I’m laughing? I am…who takes pictures of themselves in the mirror?? Oh that’s right. I do.
And I realized that perhaps I need to buy new clothes. Um, the below picture is from September 2006 at my birthday/graduation party. And I have plenty of clothing items that date back further (or is it “farther”?) than this one. (Of course I wore a party hat. Rob neglects no detail when planning a party for his wifey.)
At least I have a better, although eerily similar, haircut now (that was a rough growing out stage…) but I could really go for that tan. We had just gotten back from 10 days in Hawaii. (And that’s my niece Kate. Hi Kate! Muuuaaah!)
Alright, back to work for me!
Where is your favorite vacation spot! I need ideas for a wonderful summer getaway. I need to pretend I have an exotic vacation to look forward to.

My husband is usually pretty good about putting his clothes away, but I totally do the leave-out-and-use-again thing, mostly with my million pairs of comfy sweatpants.

IBS = Irritable Bowel Syndrome. I don’t recommend it.
I used to have stomach pain, cramps, and other unpleasant issues all the time. Now I know how to control it with diet. So much better than taking prescription medication!

And I’m totally the one that puts on about 8 different things in the morning and then takes them off, laying them nicely on the bed to hang up later, and THEN I through them all on the floor at about midnight too tired to hang any of them up! Husband is pretty much totally opposite!

Yeah, they do kind of look like brown rice. They have a different flavor and slightly different texture though. I love ‘em!

I recently purchased oat groats for the first time and when I tried to make them (following the directions on the package) there was a ton of excess water and they were pretty hard.
Then I googled “slow-cooker oats” or something of the sort and followed those directions (obviously a slow cooker is needed) and they came out really fabulously with no excess water.
Also, this looks like a wonderful Mexican inspired breakfast! I love avocados and tomatoes on nearly everything.
