A Tornado in My Kitchen

Yesterday’s fun run with Courtney was indeed fun. We ran around Salem Lake, which is about 7 miles. I haven’t run more than 4 miles in a loooong time so I was pleasantly surprised that I could still do the distance (and I think we kept a decent pace…I forgot my Garmin but it felt fairly quick.) The weather was beautiful – 50 degrees and sunny.

My running partner is also beautiful.IMG_1910No, I didn’t run with my aviators on…but that would have been awesome. I forgot my running sunglasses (geez, forgetful much?) but luckily all the trees, even sans leaves, kept me from squinting too much.IMG_1911We also may or may not have climbed a fence during our run. They closed and locked a gate that is  always open and we didn’t feel like going back 0.5 mile to get around it…so we went up and over.  Honestly, I never would have done it without Courtney’s prodding…she is brave. I’m not. I felt like such a rebel. ;) [And no, it wasn’t that yellow gate behind me.]

I also ate gelato again for breakfast today. Just kidding – that is actually banana + strawberry “ice cream.” Frozen banana + frozen strawberries + food processor = tastes a lot like my dessert the day before. :) Nothing else, folks. Nothing else. Incredible, right?DSC_0862-5 I finally got the storm I was hoping for: our area is under a tornado watch tonight…but that hasn’t stopped me from making a mess in the kitchen. Or from filming the crazy rain while driving. :)

Dinner was from Clean Food: Swiss Chard with Roasted Golden Beets & Sweet Peas (pg. 66). Yellow beets + red chard = pretty pretty. I served it with some couscous. yum yum yum.DSC_0866-5

Then, I made Whole Wheat Flax Bread.DSC_0871-9

Then I made Marathon Cookies.DSC_0877-4Marathon Cookies (from 101 Cookbooks)

2 cups rolled oats (not instant oats)
1 cup whole wheat pastry flour
1 tablespoon aniseed, crushed in mortar and pestle (or spice grinder)
1 teaspoon baking powder
1 teaspoon baking soda
zest of one lemon
1/2 teaspoon fine grain sea salt

one 15-ounce can white kidney, great northern, or navy beans, rinsed & drained
1/4 cup olive oil
1 cup natural cane sugar (or brown sugar)
1 large egg
1 teaspoon vanilla extract
1/3 cup chopped dates [I like mine chopped pretty finely]
1/3 cup sesame seeds

  1. Preheat your oven to 350F degrees and place a rack in the top third. Line a cookie sheet with parchment paper and set aside.
  2. Pulse the oats in a food processor until they resemble a raggy flour. [Be sure to process it enough that you don’t have whole oat pieces left.] Transfer the oats to a large mixing bowl and whisk in the flour, aniseed, baking powder, baking soda, lemon zest and salt.
  3. Pulse the beans and olive oil in the food processor until they are creamy. Add the sugar, egg, and vanilla extract and pulse until smooth. Scrap down the sides of the bowl once or twice along the way.
  4. Pour the wet ingredients over the dry ingredients and stir until the ingredients start to come together. Sprinkle the dates across the top of the batter and stir until everything just comes together.
  5. Place the sesames seeds in a bowl. Make each cookie with a scant 1/4 cup scoop of dough. [I just used an ice cream scoop.] Roll each scoop of dough into a ball then coat it with sesame seeds. Set each ball on the prepared baking sheet and with the palm of your hand flatten the dough just a bit. Repeat with the remaining dough, leaving at least an inch or so between each cookie – they’ll spread a bit, but not much. Bake for about 15 minutes or until the sesame seeds around the bottom start to get golden.

This time, I tried rolling some in chia seeds and tried some just plain, without rolling them in anything. The ones rolled in sesame seeds are definitely the best. Heidi knows what she’s doing!

Now I need to clean up my kitchen! :)

That fence had it coming!! Haha. You totally owned it, no reason to be scared! I do have a couple of scratches from those barbs at the top though! haha. That was seriously an awesome run, we should do it again sometime.

ps – I’m jealous looking at all your tasty treats, I should have stopped being lazy today (or maybe it was our 4 hour nap…) and made something yummy…guess it’s not too late! I’m thinking oatmeal chocolate chip…
pps – I’ll cast my vote for the NYT chocolate chips too! Soooooo goood.

have a couple scratches too. it’s supposed to be 80 degrees this weekend. We should go for an early run and then take the in-laws out on a canoe. I mean, you and I will have our own canoe obviously. Everyone else can fend for themselves. :)

There might be some cookies left over for LOST night. Then again, maybe not.

I seriously need a breadmaker! There is nothing like fresh baked bread…YUM.

you can make bread without a breadmaker! I don’t have one. Granted, I do have a heavy duty mixer, but I’ve made bread totally from hand many times. :) Just be prepared to work!

Whoa..careful there you crazy rebel you!!! bahahaha Impressive with the 7miles!! I was hoping for some voice commentary on that video…but nothin. Just rain. Way to video that while driving too ;) I HAVE to make that bread. Maybe I will tomorrow..we’re out! Dinner sounds yummy + looks pretty as does your breakfast…HOW did that fill you up though?? I would have been eating 20min later!! I have never tried either of those cookie recipes and I’m going to check them out now. Your blog reminds me that I can’t wait to get a FLASH!! Nitey nite!

I was going to take another video with commentary since I realized the first one was boring. But then the rain got REALLY bad so I had to put the camera down adn focus. :)

And obviously, that wasn’t all I ate for breakfast. Definitely had some oats topped with quinoa granola after that. :)

I love my bounce flash! Although, I’m not sure I really know how to take good pictures with it.

An awesome run, some homemade healthy ice cream, some cookies and a fantastic dinner. I’d say all around, this was a wonderful weekend! :)

What are your thoughts on your running skirt? Do you like it? Pros/Cons? I’ve seen them around a lot, but wanted to get an “expert” :) opinion!

I LOVE my running skirt. So much so that I wore it in my marathon. I feel instantly cute when I put it on and it really is comfortable.

Pros: cute, airy, comfortable, good sized zipper pocket on the back
Cons: the shorts inside ride up (but that could just be a sizing problem), I think it’s a good length but I’m 5’1″ – I can’t imagine it on a taller girl. WOAH.

I’ve heard some worry about flashing their booty with the skirt, but I’ve had girlfriends do a booty check and apparently it’s not an issue. :)

Awesome! Thanks! I’ll have to check them out…I’m going to have to be careful because at 5’9″ I may have a booty flashing problem :)

I’ve always been drawn to them because of the cuteness factor, but they sound like they are pretty comfy too- obviously if you can run a marathon in one! Thanks for your input!

the tornados hit neighboring towns and supposedly one hit in Winston Salem somewhere, but we were OK. Lots of crazy rain, wind, and lightening, but nothing horrible. Thanks for thinking of us! :)

mmm…thin mints… so good. have you tried the Back to Nature Mint Fudge cookies. They taste JUST like Thin Mints!

My favorite cookie is fresh chocolate chip cookies. I like to get the take and bake kind so I can only bake a few at a time. Otherwise I will eat ALL of them!! :)

Yay for a good run!! That’s crazy you were able to just go right back to 7 miles. Impressive. :)

I want to know what was up with the car in front of you’s brake lights. They were flashing or something. Knowing how awful ATL drivers are in the rain it was probably just someone brake happy. ;)
