Not Your Average Pancakes

Does your pancake batter look like this? I didn’t think so.

I planned to follow Katie’s Brownie Batter Pancake recipe, but since I didn’t have everything hardly any of her ingredients, I tweaked it. Just a little. :)

Here’s what I ended up using:

  • 30 grams whole wheat flour (a little less than 1/4 c.)
  • 1/2 scoop Original Amazing Meal
  • 1 1/2 T (maybe more) unsweetened cocoa
  • pinch of kosher salt
  • 20 grams apple butter (about 1/8 c)
  • 1 t ground flax + 3 t water [egg replacement]
  • 1/3 c. almond milk
  • 1 t. honey
  • semi-sweet chocolate chips

You can probably tell that I just eyeballed a lot of stuff. :) I mixed the dry stuff, and the wet stuff separately and then combined them, mixing until smooth. Then I folded in the chocolate chips. I sprayed my pan well and let them cook over medium a little longer than normal pancakes so I could flip them. [They seemed kind of fragile.]

Then when I removed them from the pan, I sprinkled a few more chocolate chips on top and folded them in half so they’d melt into gooey deliciousness. While those melted, I sliced up a banana and thawed some frozen strawberries, then sliced those too. I stuffed some inside, threw some on top, and then drizzled the strawberry juice from the thawed strawberries over everything. Hellooooo!

I devoured it. As a disclaimer, I could taste a little green from the Amazing Meal when I tried the pancakes by themselves. But once I had all the fruit on there, I couldn’t taste it at all. Veggies with my chocolate pancakes? Yes, please.

Oh my WORD! They look so amazing that I’m wishing I could come find you and have you cook me breakfast tomorrow morning. I promise I’m not a creepy stalker… :)

Just the batter alone… Chocolate heaven!

YUM! Looks delicious! Have you tried coconut butter? I have seen it on blogs and was considering picking it up at Earth Fare tomorrow…wanted to get the Teri seal o-approval. :-D

I haven’t tried it, but Ashley [edibleperspective.com] and I were just discussing it yesterday. She loves it and I totally trust her opinion on food. Let me know if you try it out!

Awesome! I live in Winston-Salem and there aren’t a ton of great foodie places here, but I know of a few. :) Where are you moving to?

Asheville is so cool! My brother and his wife lived there for a while; it’s beautiful and it’s a cool city. I think you’ll like it there. :)

I’m so glad you like my blog! I was just reading yours after you commented and saw your post about needing new running shoes. I have the exact same asics and I always get a hole on the top above my big toe; that’s hilarious you get the same thing but with your little toe! :)

hahah for real eh?? I guess it’s suppose to happen then??? haha:)
It’s actually not that hard to give it up. I just miss cacao powder that I would normally add to my oats or green monsters but now I know that your pancakes will be my first chocolate treat once lent is over:)
