Sheesh! I still can’t get my internet hooked up so I finally just moved the computer back until I get it figured out. I’ll be excited to move the computer when I can figure it out, but I couldn’t stand it any longer; I missed you guys too much to continue the blogging hiatus.
So, wanna see my tasty eats this week? It’s been a good week for food.
Multi-bean Salad with Fresh Herbs (From Clean Food. Buy it. It’s so worth it.) Basically, it’s four kinds of beans with a little vinaigrette with loads of fresh herbs. Fresh herbs make any dish amazing.![]()
This week I finally made Ashley’s Graham Crackers. I’m not gonna lie, I was a little skeptical since her recipe is so healthy. I didn’t think they’d be that good. (Sorry Ashley! I should have known better to just trust you implicitly.) People, RUN to your kitchen and make these. They are amazing. She really has perfected them. And they are so easy to make. And healthy.
So what did I do? I unhealthified them.
If you make them slightly too thick on accident like I did, they happen to have the perfect texture for ice cream sandwiches. hehe.
I softened my ice cream a bit (I used Ben & Jerry’s Vanilla…which is extraordinary), put a small scoop between two crackers, smashed together and wrapped in saran wrap until frozen hard again. Then I let it soften for a few minutes. Then devoured. Then tried to steal Rob’s (unsuccessfully).
I subscribed to Clean Eating Magazine a few months ago after I kept reading Emily’s reviews of their recipes. I’ve been really impressed with everything I’ve tried from their magazine so far.
Tonight was the Ginger Tofu Stir-fry Rice Bowl. I haven’t had tofu in a long time…and this hit the spot. I definitely recommend that magazine if you are looking to spice up your menu; their meals are affordable, quick to prepare, and tasty. And they have great variety for meat lovers and vegetarians alike. (And no, I can’t use chopsticks, but I always try. I switched to a fork quickly.) ![]()
And…I created a new playlist for my cycle classes this week. I love the variety in this mix. It created a great background for a super tough workout – I used a couple drills that I did in someone else’s class last week. You guys know I sweat a lot, but this workout made me sweat a LOT.
It’d be a good workout to do on your own. If you’re interested in the workout details, let me know. (I’m not sure how many of you teach spin or have access to spin bikes outside of classes…I know my gym keeps the cycle room locked up when classes aren’t in session.)![]()
This post was kind of all over the place. I’m out of blogging practice apparently.
To reward you for your patience with my lack of blogging and haphazard posting, I’m going to share a yummy, healthy popsicle recipe with you this weekend. Wooohoooo! (Act like that’s a really good reward, k?)

When I was having surgery, my uncle actually bought me a ton of magazines to read in the hospital and Clean Eating was one of them. I loved it! It’s a little on the pricey side though and I hate that they come out every two months – but it’s still a good read. I love anything out of Vegetarian Times too! (:

I love Clean Eating Mag too – Great ideas that are easily tweaked offering great variety. Tosca Reno’s Eat Clean cookbooks are great also.

Cooking Light just did a big revamp and I’m loving it — more whole foods, less “low-fat substitute” processed stuff. Even if I don’t make a ton of their recipes I still get inspiration. After years of resisting Vegetarian Times I got a subscription and love it — their website is great. And Saveur is straight-up food porn.
We learned to use chopsticks as kids, but I perfected the art as an exchange student in Japan. It’s actually easier to eat salad with chopsticks, believe it or not, since you have more control than with a stabby fork.

YES! That’s where I’m trying to move mine. If I have it in the living/dining room, then I can be around the hubs more while he studies, keep a better eye on the dog, AND watch the Food Network at the same time.
haha! It wasn’t as big as it looks. But definitely not “little” – maybe a heaping scoop from a standard ice cream scoop. But with ice cream – more is usually better. hehe

I’ve had the same problem with the cookies getting rock hard. I have no idea how to fix it but somehow that didn’t happen with these graham crackers. Maybe because they are thinner than most cookies I’ve tried??

I am so bad at chopsticks. After four years of living in LA with a TON of asian friends and going to places where they don’t even have forks on hand as backup, I got okay at them, but I still suck. Sometimes I eat random things with chopsticks to practice because I miss asian food so much! That’s a little weird, I admit. But it helps.
