After reading Gina’s The Fitnessista blog for over a year, I finally made a breakfast cookie!
Um, WHY did it take me so long to try this?? So. Good. So good!
Here’s my spin on it based on Gina’s recipe:
Coconut Cherry Chocolate Breakfast Cookie
- 1/3 old fashioned oats
- 1 T peanut butter (or nut butter of your choice)
- 1/2 scoop Designer Whey Vanilla Protein Powder (which I bought on Gina’s recommendation, actually)
- 1/8 c milk (I used organic cow’s milk, but I bet almond or rice milk would really tasty)
- 1 T (or so) dried cherries, chopped
- 2 t shredded coconut
- 1 T semi sweet chocolate chips (Tyler taught me that it’s OK to have chocolate for breakfast)
- Cinnamon
I followed Gina’s instructions:
- Combine oats, PB, and protein powder (if using) until combined and kind of crumbly.
- Add milk and stir until well combined.
- Add in your tasty mix-ins.
- Transfer it to a plate and using the back of a spoon, flatten and spread it out to make a cookie-ish shape.
- Stick ‘er in the fridge and let set overnight.
- Wake up to deliciousness. Sprinkle with cinnamon and devour with a spoon.
I haven’t been craving oatmeal since the weather has warmed up and have been living on Kashi GoLean. I love eating oats for breakfast since they are so clean and cheap, but I haven’t really been craving chilled overnight oats. (I think my last batch was too goopy and turned me off.) This cookie totally hit the spot. It’s a perfect summer breakfast.
Cookie notes:
- It hardened up more than I was expecting it to, which was nice.
- I ended up picking out the chocolate chips (crazy, I know). They were too hard compared to the other textures; I wish I had cacao nibs!
- This actually held me over until lunch. I was very surprised.
- I’m going to make another right now for my breakfast tomorrow.
FYI, I had dried cherries on hand because I plan to make Mama Pea’s Cherry Almond Granola this weekend. Has anyone tried it?
I had coconut on hand because, along with the rest of the blog world, I made Jessica’s Loaded Blueberry Coconut Muffins yesterday. (I may or may not have gone to the store at 7:30 AM to buy coconut just to make these muffins.)
Also, happy 2 year blogiversary to Gina! I think it’s fitting that I had my first breakfast cookie on her bloggy birthday.

I have to laugh because I wanted to make those muffins as well this weekend! I didn’t have any coconut, and tend to have a slight allergy, so I made banana-blueberry muffins instead. I’ve been seeing a lot of blueberry muffins in the blog world lately! Obviously, we’re on to something good.

I’ve actually never tried a breakfast cookie, even though they seem right up my alley. But I don’t buy protein powder ever (do you think it would completely lose it’s texture if I made one without it?)…and I’m also really bad about remembering to make overnight oats. Maybe one of these days…
And those muffins also look amazing. Definitely something I need to make soon!

Yeah, I think the texture would be OK without protein powder. I’ll test it out and let you know.

i haven’t had one of Gina’s cookies because I can’t bring myself to pay for protein powder…but they look and sound so great! i have a cookie i like to make in the winter though…sooooooooooooo good!

I love Gena’s B-fast cookie! They’re fantastic. My favorite mix-ins are cacao nibs (for texture) and shredded coconut! The coconut adds so much flavor…just adding a tablespoon or two makes me feel like I’m eating a macaroon for breakfast! A very healthy macaroon, of course.

I love Gina’s breakfast cookie! I don’t like chocolate chips in it either. Definitely dried cherries would be good. I use raisins. I haven’t had one since last summer though. We’ve had such a cruddy spring that I haven’t craved that yet.

Can you believe I have never made a breakfast cookie or overnight oats? You cookie makes me want to give it a whirl. I love dried cranberries…and maybe some pumpkin! Not so summery, but I love the flavor combo.

Your muffins look sensational! No shame in running out to get the coconut. I’ve been known to hit up the store at all hours to get some almond milk or nut butter. Like I said, no shame!

I’ve totally had a breakfast cookie before – they are so good and wayyy more filling than you’d expect. I’m pretty sure I mixed in chocolate chips with mine as well (but I’m not crazy enough to pick them out lol) as well as banana and walnuts. You know, I think I’m gonna have to make one for breakfast tomorrow now thanks to this post!

I actually tried a breakfast cookie not too long ago. Now between that and overnight oats, I am full on addicted. Dried cherries are delicious. I love dried mango too. Delicious, quick options.

I love the Breakfast cookie, though we haven’t been together in a few months. Everytime I try and decide what I want for breafkast, I rememebr BC, and think why didn’t I plan this out last night. Hmmm Maybe tonight or tomorrow night I shall throw together a BC. They are so GOOOOOOOOOD!
I used to make breakfast cookies quite a bit last summer but somehow I got out of hte habit! They are tasty–and so easy!

mmm, no bake granola bars? that sounds right up my alley!
Cacao nibs are great because they don’t have any added sugar, have great crunch, and tons of antioxidants. They are what chocolate comes from. Pretty bitter but great in certain recipes.
