The Weekender

Hi folks! Really, Sunday already?? Why must weekends fly? But hey – at least next weekend is a holiday weekend! (And my brother and his little family are coming to visit. YAY!)

Is there anything better than starting your weekend days with blog reading and a breakfast cookie? I think not. (Hi Lisa! Can you guys see me and my bounce flash? Have I told you guys how obsessed I am with my bounce flash? I am.)

DSC_0864-1 Speaking of breakfast cookies…I’m seriously obsessed. Gina has changed my breakfast life. I tried a new (to me) combo yesterday.

Banana Walnut Bread Breakfast Cookie
  • 1/3 oats
  • 1/2 scoop protein powder
  • 2 T almond milk
  • 1 T peanut butter
  • 1 T flax meal
  • 1/4 t cinnamon
  • 1/2 banana, mashed
  • 1 T chopped walnut

Follow the same basic instructions on my first post about making breakfast cookies. This one tasted like banana walnut bread. SO GOOD!

Alright, onto The Weekender! Enjoy some of my favorite reads from the last week:

  • Is your job bad for your health? I’m considering getting a big balance ball to use as my chair at the office. Does anyone else do this? What do you think?
  • Are you concerned about what kids are eating these days? I think healthy eating habits start in the home and parents need to be involved about what their kids eat at school too. Of course, this is coming from a childless adult. :) Easier said than done, I’m sure.

Now, I believe I promised you guys a popsicle recipe. You know I’m trying to find ways to use up mint and I’m still working through some bottles of POM Wonderful that the wonderful folks at POM sent me a while ago.  DSC_0890

So, I give you…

Pomegranate Mojito Popsicles

Makes 3 small popsicles, about 50 calories each

  • 1/2 c. lowfat vanilla yogurt
  • 3 T 100% pomegranate juice
  • 3 t lime juice
  • 1 t chopped and muddled mint leaves

Combine all ingredients. Feel free to adjust the proportions to taste. Pour into popsicle molds and freeze until hardened. (If you don’t have popsicle molds, paper cups with wooden skewers will work too.)

I recently bought these popsicle molds and am quite pleased. DSC_0970 Pretty and pretty tasty.DSC_0971 Let me know if you try these. I’m biased, but I think they’re great. :)

What’s your favorite kind of popsicle? I want to get a lot of use out of my new molds.

I seriously want those molds! I’ve never made homemade icepops but I always loved the frezees when I was a kid – your version is way more mature – gotta try it! (:

Popsicle molds make me feel like I’m a kid again :) Well… maybe that’s because I haven’t had one since I was a kid, haha.

What yummy looking popsicles!!

I have also considered using a ball instead of a chair. I find that no matter what chair I use at work, I still have discomfort. Please let us know if you make the leap and try the ball!

There are not enough thank-yous for the shout out!! You’ve made my week. Had I known my darierre was going to be on blast, I would have taken better pics, haa.

Loaded oats are a divine way to start the day! My old colleague had a balance bar as a chair, everyone knew her as the “lady that sat on a balance ball” but I definitely would consider getting one. Two birds, one stone.

What kind of pops are those?! I have never heard of such a tasty mixture. Pom mojito, that could also make for a lovely adult beverage. I have the serious old school molds but haven’t whipped them out this summer.

oops! sorry to blast your bottom pictures to the blog world! LOL.

They are just some popsicles I made up trying to use up mint and pomegranate juice! We’d made virgin Pom mojitos a few months ago and I wanted it in popsicle form. :)

I don’t use the stability balls at work although I’ve seen some that do. There are times when I will use one at home but I have to be very careful as time gets away from me and my lower back and core start to scream from trying not to roll away ;)

I’ve been purposely not watering my mint hoping it slows down how quickly it’s growing but so far it keep flourishing. I’ll have to try this recipe out when I get some POM!
