Blueberry Lemon Creme Brulee

heh. heh. heh. Something about this picture just makes me feel a little bit evil.DSC_0910 It looks a little burnt…but it didn’t taste burnt. It tasted um, approximately, amazing.

It’s possible there are still two more crème brulees in the fridge. So, um I gotta go. Go to bed that is. Riiiight.

What’s your all-time favorite dessert? Mine is crème brulee or an éclair. If both were in front of me, I really don’t know what I would choose if I could only choose one.

BLUEBERRY CRÊME BRÛLÉE

Makes 4-6 crème brulee servings (depending on ramekin size)

  • 1/3 cup sugar
  • 4 egg yolks
  • 2 eggs
  • 2 teaspoons lemon zest
  • 1 cup 2% milk
  • 1 cup whipping cream
  • 1 cup fresh blueberries
  • Topping: 1/3 cup packed brown sugar, sifted
  1. Preheat yo’ oven to 350 degrees.
  2. Whisk together sugar, egg yolks, eggs, and lemon zest; whisk in milk and cream. Let sit for a couple minutes to infuse lemon flavor.
  3. Pour through a fine-mesh strainer into a pitcher. Throw away the lemon zest that strains out.
  4. Place your ramekins in a large baking dish. (You might need to use two pans depending on your ramekin size.)
  5. Pour the “batter” into six 1-cup ramekins or 4 large, shallow ramekins. [I used larger shallow dishes because I like a greater sugar crust to crème ratio in each bite. :) ]
  6. Evenly divide the blueberries between the ramekins, gently dropping into the liquid.  Open your oven door, pull the racks out about halfway and place the large baking dish with the ramekins on the rack. Pour in enough hot water into the to come halfway up sides of ramekins and gently slide racks back in. [This helps prevent water spilling into your ramekins if you try to pour on the counter and transfer to the oven.]
  7. Bake in center of oven for about 35 minutes or until edges are set but centers still slightly jiggly. Let cool on racks 10-15 minute, and then transfer to the fridge to chill completely, at least a couple of hours..
  8. Topping: Just before serving, sprinkle brown sugar over the top and torch until sugar melts and turns a caramel color. Let harden for about a minute before serving.[ Or, if you don’t have the joy of owning a kitchen torch, use can use your oven broiler.]

Ahhh, crazy, those are not my 2 favorite desserts! I do love creme brulee but usually can’t finish it because of the sweetness! Yours looks like perfection though and I’ve never had blueberry. I’m sure I could manage finishing it ;) Favorite dessert? Goodnes….let’s see…ohhh possibly my mom’s 7-up cake. Can you say lemony buttery deliciousness? It’s like pound cake with lemon and an amazing crust. I honestly cannot say what my all time favorite is though…

My mother-in-law makes some crazy Italian Almond Cake…topped with fluffy real whipping cream…and always sends me home with a tupperware-full to eat cold the next day. I think it’s that. But then there’s dark chocolate biscottis dipped in good coffee…or white chocolate mousse fro yo, or cold stone cake batter ice cream…who knows?! I do know that I need a flame torch!

Oh, my favorite dessert is DEFINITELY creme brulee. At Mama’s Fish House in Maui, they serve a creme brulee with lilikoi syrup. OMG. Heaven on a spoon!

Oooooh my gosh I love me some Crème brûlée and yours looks HEAVENLY!! I have my own Zippo torch and kit with fun flavored sugars.

The last time I made it (and this has hindered me from doing so again) I used a lighter cream. And you know what? It never set. Awful. It was runny and wouldn’t torch and was gross.

You need allll that fat in there :) I’m inspired to try again!!

That looks crazy delish. I don’t remember ever having Creme Brulee before, is it easy to make? The ingredient list doesn’t look too intimidating at least.

It actually is really easy. And it’s a great dish to make if you have company because you can make it ahead and then just brulee the top right before serving. Easy but impressive!

I’ve always wanted a torch. Next you should find some marshmallows, mmm.

My hubs favorite dish is crème brulee, I sent him this link, hopefully he’s inspired. I’m more of a Baked Alaskan type of lady, you could use your torch on that!

Too difficult a question! Your creme brulee looks superb. I would have to say my mom’s sponge roll cake with whipped cream and berries :) OR a really great crisp or pie. Tres leche’s cake is really good too. I’ll stop now…hehe

You can definitely use your oven broiler to melt the sugar. I did that for years before I had a torch.

Amazing!! Sometimes I have a hard time choosing creme brulee at a restaurant over the chocolate options, but something tells me I wouldn’t have a problem with this recipe!!

I actually have a hard time saying what my all-time favorite dessert is. I like dessert way too much to choose one above all others! But it’d probably be something chocolate-y…like chocolate lava cake
