The Weekender + Sweet Potato Waffles

Happy Sunday! I love Sunday mornings because I usually make a yummy breakfast. Today’s breakfast included two eggs (cooked using Ashley’s Poke & Spread method), toasted whole wheat flax bread with a little Brummel & Brown spread, and a super sweet, organic peach. (By the way, that whole wheat flax bread makes awesome toast. It’s so good with a little butter.)

These eggs were laid yesterday afternoon and I bought them about an hour after the egg (chicken loving, blanket crocheting) lady gathered them. Yes, they taste amazing and I can really taste a difference from the ones purchased at the store. The poke & spread method really allows the good flavor of the egg to shine.DSC_0920

Onto the latest edition of The Weekender! It’s short & sweet this week.

So, you know how I recently had amazing sweet potato pancakes and I also just got a Belgian waffle maker? Well, I looked at a bunch of recipes online and couldn’t find exactly what I wanted so I improvised. And it turned out pretty dang tasty. I think next time I might even double the spices and experiment with using all wheat flour or perhaps spelt in place of the all-purpose flour.DSC_0924

Sweet Potato Waffles

Makes about 2.5 large, round Belgian waffles

  • 1/2 c whole wheat flour
  • 1/2 c all-purpose flour
  • 2 t baking powder
  • 1 t cinnamon
  • 1/4 t ground cloves
  • 1/8 t ground ginger
  • 1/8 t allspice
  • 2 T chopped walnuts or pecans (optional)
  • 1 egg, separated
  • 3/4 c milk
  • 1/2 c pureed sweet potato (1 medium sized potato)
  • 1.5 T oil
  • 1 t orange rind (optional)
  • 1/2 T sugar
  1. Wash sweet potato, poke a few holes in it and microwave until tender, 3-5 minutes. Let cool.
  2. Combine flours, baking powder, spices, and nuts.
  3. Scoop sweet potato out of skin and mash enough to measure 1/2 c.
  4. Combine sweet potato with egg yolk, milk, oil, and orange rind.
  5. Add wet ingredients to dry ingredients and mix until just combined. Don’t overmix.
  6. Using an electric mixer, beat the egg white with the 1/2 T sugar until stiff peaks form. Fold into the batter.
  7. Spread into your heated waffle maker and cook away!

Suggested toppings: butter, coconut butter, almond butter, pure maple syrup, extra nuts, extra cinnamon.

Approximate stats: 410 calories, 16 g fat, 2.8 g saturated fat, 80 mg cholesterol, 75 mg sodium, 56 g carbs, 3.8 g fiber, 12 g protein

Your breakfast looks like PERfection!!! I got rid of my waffle maker when we moved…so dumb!! It was sitting out and the donation truck came and I didn’t feel like packing ANYthing else, so off it went. LOL. At least it was a hand me down.

I’ve always wanted to get a frozen hot chocolate, but every time I go to NYC I forget!! Terrible of me, I know. I’ll get there one day.

I know, aren’t farm fresh eggs just so much better! I will never be able to go back.

Those waffles sound amazing!! I love homemade waffles, but homemade sweet potato waffles….now that’s something to celebrate!

Wow! What a fantastic breakfast then the Sweet Potato Waffle…heaven.

I read that article on the deadliest sweetner earlier this week and was so outraged at the makers of Aspartame…what will they do next? UGH :(

I am sure those eggs were amazing! I haven’t had eggs in so long but if they were just hatched and ethically raised chickens…um, yes please! That bread is something I can’t wait to make but I would love to see the scone recipe!

I got a mini waffle maker for Christmas 2 years ago but before I could test it out.. I kind of lost it. I’m sure it’s around somewhere.. it better turn up because I want to make a sweet potato waffle!

I’ve never tried frozen hot chocolate but I’m thinking about trying to make some tonight. :)

Your waffles look sooo good! I had never thought of incorporating sweet potatoes into breakfast before! I’m also super jealous of your cocao nibs! I keep seeing them on everyones blogs, and i WANT some! Next time i go to town they will be mine!!!

People keep posting DELICIOUS LOOKING WAFFLES lately! I know I couuuuld get a waffle maker (I see them for really cheap at Goodwill- I think people get them for wedding presents and just never use them) but I am kind of scared at my lack of counter space. But oh my God that looks so good!

I loved the movie Serendipity, but never had the actual frozen hot chocolate myself. I have been to NYC several times and have somehow missed out. It’s on the Bucket List.

I work at a Waldorf Astoria Hotel in South Florida, and we have a Serendipity in our hotel. This is very very bad and very very good….I get the frozen hot chocolates from my friends who work there all the time! They are so delicious!!

My heart skipped a beat when I saw the title of this post. I LOVE sweet potatoes. Love love love them! And waffles, too, of course. Can’t wait to try them with whole wheat pastry flour!
