The Weekender + my healthiest dessert ever

Hi blog peeps! Hope you’ve had a wonderful weekend. Ours has been nice; busy but nice. We hosted a dinner last night that I’ll be blogging about soon. Courtesy of Wild Alaskan Seafood Cook It Frozen! & Foodbuzz, I was able to host a delicious dinner party with fresh Alaskan halibut. I’ll give you more details, but it was pretty exciting!

But, let’s get onto The Weekender.

  • Tina is training for a marathon with her husband, Mal, and raising money for the Luekemia and Lymphoma Society. Read why she chose Team in Training and donate to her fundraising here. You can skip a latte this week and give $5 to their fund instead, OK?
  • How much good are you really doing by eating locally? “Math Lesson for Locavores” makes some very interesting points.
  • I really want to make this.

Alright, speaking of simple desserts…Y’all know that I don’t think that dessert has to be just fruit. In my life, fruit is a side dish, not dessert. But in this case, I make an exception.

Broiled Peaches

1. Get ya a pretty peach. Turn your oven broiler on high.DSC_0977

2. Cut it open and realize it’s not so pretty inside. Shrug. Place the beach slices cut side up on the pan. DSC_0978

3. Add nothing and just place these under the broiler (I put an oven rack on the top shelf for this). Broil for 5-10 minutes until bubbly and browned. And oozing deliciousness.DSC_0979

4. Eat. With a spoon. Don’t burn your tongue.DSC_0985

5. Repeat.

What’s your favorite broiled, grilled, roasted fruit? I love peaches (obviously) and pineapple.

I haven’t tried broiled peach but I can imagine how good it is. My favorite fruit during this summer is definitely peaches! :D

Peaches are fantastic eaten any time or any way. I love roasting fruit. Pineapple is also delicious grilled with some coconut ice cream. Yum!

And about the milk. We drink whole around here… (or 2% when my baby’s hit 2). But I visited my mom (in Alaska–speaking of your Alaskan halibut) not too long ago and saw that they drink whole as well… I guess she’s been doing some research and found that whole is actually the healthiest for you. Who’d have thought?!

Broiled grapefruit??? I’ve never even heard of such a thing. Do you just slice it in half, similar to the peach?

love love love peaches! i think you need to add a scoop of ice cream (or Greek yog) on top of that tho with almonds + nutmeg ; )

Our peaches have not been very ripe and tasty this summer. Did cooking them like this help bring out the flavor? Perhaps this is what we’ve been missing!
