The Weekender + a Pineapple Basil Smoothie

Happy Saturday folks! And welcome to football season! I LOVED all your comments about my slutty dog. And I’m so happy I could make many of you laugh with that picture. I was also glad to hear that I’m not the only one who has a pet with absolutely no class.

I’m headed to Utah next week for my best friend’s wedding (YAY HOLLY!!!) and will be there to celebrate my adult birthday too. Unfortunately, Rob and Maizey can’t come. :( I hope to do some blogging and also have a couple guest posts lined up for ya.

Again, lots of great reads in the blog world this week. Does anyone else sometimes just feel overwhelmed by the number of fantastic blogs there are and so little time to read them all?

The Weekender
  • This post reminded me of why I really need to add more interval training into my workouts.

Now, a little recipe for ya. At Whole Foods, they have a pineapple-basil gelato that is amazing. Almost as amazing as their orange-fig gelato. Or maybe those flavors are sorbets. I don’t know. It doesn’t matter. They’re freaking delicious.

Well, I happened to have an excess of pineapple and basil on hand yesterday. Enter the pineapple-basil smoothie. It tastes like the pineapple-basil gelato/sorbet/whatever had melted and poured itself into my glass. And it was good.DSC_1204 (Yes, we have white Christmas lights on our deck. It’s so fun in the summer. Except for the fact that we never go outside from June – August because it’s a billion degrees and there are billion and one mosquitoes that target me and only me.)

Pineapple-Basil Smoothie
  • 2 cups spinach
  • 1 scoop vanilla protein
  • 1/2 c milk + extra as needed
  • 1 T flax meal
  • 1.5 cups fresh pineapple
  • 10 basil leaves
  • 5-10 ice cubes

Combine everything in a blender and process until smooth. The basil flavor is much more pronounced than the pineapple so adjust the amounts as your heart and tongue desire.

    Note: this was pretty sweet. And this is coming from the girl who is currently eating a sleeve of Oreos, even though I’m fully aware they are made with all sorts of chemicals and likely carcinogens.

    Point is, I like me some sweetness, but not so much in the morning and not that much. So I’d probably add some plain greek yogurt next time to balance some of the sweetness.DSC_1211 It got super foamy and frothy. Which looks kind of creepy in the early morning light. :)

    • Are you a basil fan? I don’t think I’ve ever met someone who doesn’t like basil.
    • What processed junk food can you not resist, even though you know how bad it is for you? Um, hi Oreos. Nice to eat you.

    I agree that there are too many good blogs and not enough time! Your weekender helps simplify things for me. :)
    That basil smoothie looks interesting. I love basil and recently had a chocolate filled with basil cream. It was awesome. Nobody ever thinks of basil as a compliment to sweet foods.

    I adore basil, it’s so refreshing! I have to agree with you about the oreos, especially the double-stuffed ones. The mint oreos are delicious too!

    That shake looks delicious!!!!!!! I love when unexpected foods are pared together, pineapple and basil, who’d have thought? I always add a banana to my shakes and i wonder if it would absorb some of the pineapple’s sweetness?

    Loved all those linked blog posts. Many of them I had already read, but some I had not. The pineapple basil smoothie sounds great! I just bought some fresh basil today for a caprese salad. And I may just have to finally break down and buy a food processor to make my own pesto!

    What a unique smoothie combo! I always love WF recipes.
    I can’t resist dark chocolate M&Ms. My mom always keeps a stock, and I always seem to be grabbing a few to nibble on.

    I really like all those low-fat ice creams (Skinny Cow, etc). I know they have like ten million ingredients in them and everything, but I like the way they taste.

    I love basil. Pesto specifically. And also a nice BTM (basil, tomato, mozz) sandwich. Yumm, one of my favorite things about summer is that you can find it easily.

    I love basil so much! This morning, actually, I opened the fridge, pulled out my basil and just stood there smelling it for about 5 minutes. It is hands down my favorite smell on earth, and the taste is pretty stellar, too.

    I love ALL cereal. Processed, sugary, ALL of it. Luckily, some of the healthy ones taste good enough to fool my taste buds, but I could eat cereal for the rest of my life.

    I’m actually not so big on basil. I’ll eat it and use it in recipes, but I definitely have to be in the mood for it — otherwise, it can be a bit overpowering to me. Your smoothie recipe sounds really good, though — I loooooove me some pineapple.

    I love basil. One of my favorite salads is fresh basil, mozzarella and heirloom tomatoes. YUM!
