Quick & Easy Biscuits

Happy Monday! I wasn’t feeling well this morning. I called in sick, took some medicine, and went back to bed. I woke up at 2 PM. Not kidding. 

When I’m not feeling well, the only food I want involves carbs and more carbs. Today, my diet has consisted of homemade bread, cookies from last night’s outing, and these biscuits. And I have the Pioneer Woman’s mac & cheese in the oven. Still not kidding.

Now, let’s get onto these biscuits I’ve been telling you about. biscuits-10

Get ya dry ingredients and stir ‘em all together. I probably should have used a whisk. Ehhh..whatever.biscuits-1

Measure 3/4 c heavy cream. Oh just do it.biscuits-2

Pour cream over dry ingredients and let your puppa sniff it.biscuits-3

Stir until the dry ingredients are incorporated. Don’t overmix yo.biscuits-5

Dump the dough on a floured surface and briefly knead until it’s just smooth.biscuits-6

Pat the dough out to about 3/4” thickness. Cut with drinking glass. Or a biscuit cutter if you don’t have a drinking glass.biscuits-7

Place on greased (or mat or parchment lined) pan. Bake at 350 degrees (on a rack placed in the top third of your oven) for about 15 minutes.biscuits-9

When they are just cool enough to handle, break apart, spread a little butter on that and eat. And be grateful for biscuits. Because they make this world a better place.biscuits-11

Quick & Easy Biscuits 

{makes 8 biscuits}

I have subbed 2% milk for the cream in these before. It was a mistake. They were still good, but they weren’t GOOD. Live a little and use cream.

Ingredients
  • 2 c all-purpose flour
  • 2 t white sugar
  • 2 t baking powder
  • 1/2 t salt
  • 1.5 c heavy cream
How To
  1. Preheat oven to 450 degrees. Put an oven rack in the top third of the oven.
  2. Whisk all the dry ingredients together.
  3. Using a spoon, stir in the cream and mix just until a rough dough forms.
  4. Lightly flour the countertop and dump dough onto it. Knead 20-25 times until the dough is smooth.
  5. Using your hands, pat the dough until about 3/4” thick. Cut out biscuits and place on a greased cookie sheet.
  6. Bake until golden brown, about 15 minutes. Serve hot.

I only crave carbs when I’m sick too. When I was in the hospital last year, I begged the nurse for a PB and Jelly sandwich and a bowl of cheerios. I would have given my left arm for this meal at the time.

I love biscuits. There is nothing better than a hot, flaky biscuit. My favorite biscuit topping is honey and/or butter. I mean, if you are going to use heavy cream, go for the honey and butter!

Thanks for the recipe! And I love your “just do it” comment. Why mess with a good thing? And no one says you *have to* eat the whole tray if biscuits. I’d MUCH rather have 1 GREAT biscut than 2-3 okay ones ;)

These look so good! How many does this recipe make? Love, love, LOVE PW’s recipes! Marlboro Man’s Favorite Sandwich is a favorite around here, but I don’t make it often (lots of butter – and we add cheese, too). My comfort food is worse than just carbs – it’s deep-fried carbs. Hush puppies. I’d never seen them dipped in butter until I moved to NC. As far as comfort goes, that’s got to be some of the guiltiest comfort around…. but still yum!

MMh, biscuits. I’m a fan of the butter and jam combo! And in addition to your reply above, I agree. I’ve never seen hushpuppies dipped in butter until I came to North Carolina.. They are all about the honey butter. Crazyyy.

My favorite biscuit toppings are fresh strawberries and vanilla ice cream :) I had biscuit-based strawberry shortcake at my Grandma’s house many, many times each summer. While I do love her recipe, I’ve been looking for an alternative since her’s calls for shortening. I’m looking forward to trying your recipe!

feel better soon! i’m the same way — every time i have a cold, we go to a place in town called the green gateau so that i can eat stacks of chocolate-chip-whole-grain pancakes loaded with maple syrup. it helps.

How was the Mac and Cheese? It looks DIVINE!! I want to make it RIGHT NOW but it happens to be 12:30 at night so I can’t :( did you use all the good fattening stuff or did you do it a special “I’m Teri and I can make anything low in fat look and taste good” way? I’m glad you liked my dating story… It was crazy!

the Mac & Cheese was awesome! and I followed her recipe exactly. although, i did use 2% milk instead of whole milk since I didn’t have it on hand.

I do the same thing when I’m sick. And I make very simialr biscuits, only I use 1T of sugar and leave out the baking soda and salt. I also stir with a fork (I have no idea if that really makes a difference, but mama said to…). Easiest biscuits ever!

I have not made biscuits in ages and now your pics have me craving one! Yum. I like mine warm with butter. For me, biscuits and English muffins are best with butter that has melted.

I always crave carbs when i’m not feeling well too!

Homemade biscuits are the best. On Sunday after my long run there was a fresh batch at my parents house. Those biscuits were the best post run treat… Although probably not the healthiest but what are ya gunna do :)
